It is a space defined by timeless elegance and the art of the "American Classic," offering a sophisticated sanctuary where traditional flavors are elevated to their highest form. Here, the menu tells the story of American culinary heritage, honoring the migration of techniques and ingredients that shaped the nations most beloved comfort foods.

The Role

The Chef de Cuisine works closely with the Culinary Director to oversee daily kitchen operations, maintain exceptional food quality, and mentor a diverse brigade. This role is ideal for a chef who combines strong leadership with deep curiosity for classic American cuisine , traditional techniques

Culinary Excellence & Heritage
  • Lead Kitchen Operations: Oversee daily execution with a focus on the "Grace" standard: classic, high-end, and impeccably traditional.

  • Uphold American Classics: Execute and maintain menu standards rooted in elevated American comfort food, ensuring every dish honors the heritage of the craft.

  • Menu & Seasonal Innovation: Collaborate on the development of specials and seasonal offerings that breathe new life into timeless American ingredients.

Leadership & Team Development
  • Train & Mentor: Act as a technical guide for sous chefs and line cooks, refining their skills in classic American techniques and high-end presentation.

  • Foster Culture: Cultivate a kitchen environment that is respectful, inclusive, and disciplinedmirroring the refined hospitality we provide our guests.

  • Motivate & Inspire: Lead by example, maintaining morale and passion during high-volume services.

Quality Control & Logistics
  • Consistency & Timing: Ensure every plate meets the highest standards of quality and aesthetic beauty, delivered with the seamless timing expected in a premier establishment.

  • Operational Management: Direct prep schedules, ordering, and inventory to ensure the kitchen runs like a well-oiled machine.

  • Financial Stewardship: Actively manage food cost controls and waste reduction without compromising the integrity of the ingredients.

Safety & Standards
  • Safety Excellence: Maintain strict adherence to food safety, sanitation, and workplace safety standards, ensuring the kitchen is as pristine as the dining room.


Qualifications
  • 5+ years of professional kitchen experience, including leadership roles

  • Previous experience as a Sous Chef in a high-volume or fine-casual/fine-dining environment

  • Strong knowledge of global cuisines; experience with Middle Eastern, Central Asian, Chinese, Persian, or Mediterranean cooking is a plus

  • Proven ability to lead teams calmly and effectively under pressure

  • Passion for spices, techniques, and culinary history

  • Strong organizational and communication skills

  • Flexible schedule, including nights, weekends, and holidays
